The 4th of July is just around the corner. I hope you’ve grabbed your fireworks, cleaned out the grill and have picked out a perfect space for watching this American holiday spectacular. For those of you looking to spice things up on the grill this year, I’ve collected a few mouth watering recipes using something you might not expect (but might have plenty on hand), Sailor Jerry’s Spiced Rum!

Yes, this little alcoholic drink not only serves adult beverages but can also be used with burgers, fish or pork. While I haven’t tried any of these yet, I do plan on making the burgers this weekend so I’ll be happy to report soon how those turned out. In the mean time, enjoy these tasty recipes and make this weekend a blast!

Spice Rum Burger (PDF)

Ingredients

  • 2 lbs ground beef
  • 1/3 C lager beer
  • 4 Tbs Sailor Jerry Spiced Rum
  • 1 Tbs Worcestershire sauce
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp fresh ground pepper
  • 1 tsp salt
  • 1/2 tsp cumin (optional)
Instructions

  1. Combine all the ingredients until evenly mixed.
  2. Shape into 7 burgers – make sure toput a indentation in the center of each patty so it cooks evenly.
  3. Grill over hot coals for about 5-8minutes per side, depending on how well done you want your burger.
  4. Serve and enjoy!

Fish with Tropical Sauce (PDF)

Ingredients

  • 5 fillets of white fish without skin
  • 2 Tbs butter, melted
  • white pepper to taste
For Sauce

  • 1 C bananas, sliced
  • 3/4 C Sailor Jerry Spiced Rum
  • 1/3 C lime juice
  • 1 small jalapeno pepper, seeded and finely chopped
  • 1/4 tsp sea salt
Instructions

  1. Preheat grill. Mix the Sailor Jerry Spiced Rum and lime juice in a sauce pan over medium heat and bring to a simmer. Keep it over heat until combination is reduced by half. Let mixture cool.
  2. Pour rum/lime mix into a blender and add the bananas, jalapeno and salt. Blend until smooth then set aside.
  3. Brush both sides of the fish with the butter and sprinkle with white pepper then place on hot grill.
  4. Cook each side for 2-3 minutes- or until done.
  5. Remove from grill and serve each fillet with sauce poured over top.

Baked Ribs (PDF)

Ingredients

  • 1/4 C Sailor Jerry Spiced Rum
  • 2 Tbs hoisin sauce
  • 2 Tbs tomato paste
  • 4 Tbs ketchup
  • 1/4 C honey
  • 1/4 C soy sauce
  • 1 Tbs vegetable oil
  • 1 Tbs sesame oil
  • 2 Tbs hot sauce
  • 2 tsp fresh ginger, minced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • Kosher salt & freshly ground pepper to taste
  • 3 slabs baby back ribs (about 5 lbs)
Direction

  1. Combine all the marinade ingredients in a bowl and whisk until thoroughly combined.
  2. Score the membrane in the underside of the ribs and rub them with salt and pepper.
  3. Place the ribs in a well oiled glass dish and cover with the marinade.
  4. Cover and put the ribs in the fridge for at least 3 hrs to overnight. Turning to coat in marinade a couple of times.
  5. Heat the oven to 325˚
  6. Cover with tin foil and put the ribs in the oven for 1 and 1/2 hours. Baste with the marinade at least twice during cooking.
  7. Remove from oven and serve
